Tis the season! Love these ideas. Necessity is totally the mother of creation… have canned corned beef, mango jam, whatever was in abundance and the right price :)

All your recipes look & sound delicious! Unfortunately, I didn’t see a recipe for pickled okra. After growing up in Kansas City, Missouri for approx. 35 yrs,, 16 yrs of marriage, & 2 kids, my husband FINALLY convinced me to move to the middle of nowhere in the country when I was freshly pregnant!!! We (well he) started a garden with the basic stuff, only he added okra…what the heck is & what do you do with okra!!!
I even watered the garden every day with a watering can via our well right outside the back door, yeah, A WELL, hand cranked & chain fed! Then he’s like, when are you gonna start canning? Needless to say, I took his advise & received 2 recipes from 2 older ladies off our local radio station’s 30 minute “trading post” program. With a mixture of both, all of my family agree, we totally hate the 2-week waiting period, but we love pickled okra, & man do I love living in the country!!! I tried & successfully canned okra, salsa, dill pickles, bread & butter pickles, tomatoes, pickled beets & blackberry jelly. Of course that was after a batch of blackberry rock (I didn’t have a candy thermometer so I kinda guessed!!!) Canning is so easy!!! All mine were done by the hot water method.

Glad you are liking the canning recipes.
Can jams and jellies be made in the glass jars with the metal tops that the store bought jams/jellies were in?
Patricia- Yes, those work great.
All I want to do is can cucumbers and onions for the pantry. I don’t want pickles. Have you any recipes for that? Can’t find.
Sherry- That sounds amazing! I don’t have any cucumber or onion recipes. Sorry. If you find any, I would love to try canning them!
I have canned almost everything you could think of, but never cucumbers and onions without canning them in a vinegar mixture. If you let me know what is the end product you would use for the cucumbers and onions, I will try to help.
Thanks for your help.
